Q&A with Visiting Chef Aviad Furman

Garbanzo Mediterranean Grill was lucky enough to host Chef Aviad Furman during the month of September. A classically trained chef from the Mediterranean region, he came on board to test, tweak and try out new recipes on the Garbanzo menu. Many of these enhanced and original recipes will make their way into our restaurants over the course of the next year.

 

We had the pleasure of sitting down the Chef Aviad in between cooking and sampling demonstrations to get to know him a bit better.

How did you become interested in food and cooking?

A: Chef Aviad

I’ve been cooking from a very young age – my parents were extremely encouraging with my curiosity in the kitchen and love of fresh food. As a creative person, I think the kitchen is one of the more interesting places to investigate new flavors, textures and styles, and create something new each time I pick up my knives.

What is your educational and professional background?

A: Chef Aviad

I stared cooking professionally while I was attending Dan Gourmet culinary school in Israel. I then worked in hotels preparing Mediterranean and Asian cuisine, and have since begun my own catering business cooking for private events and chef dinners where I incorporate Mediterranean, Asian and Italian influences.

What do you like best about Mediterranean-style cooking and food?

A: Chef Aviad

I like that the food is simple but rich with flavor and fresh. Mediterranean cuisine also pairs well with other ethnic fare to create new dishes each time.

What do you think Americans should know about Mediterranean food?

A: Chef Aviad

It’s very healthy, rich with vitamins and nutritious. It’s also easy to prepare, fresh and tasty. Don’t be afraid of Mediterranean cooking – often the simpler the better.

What are you hoping to accomplish during your visit with Garbanzo?

A: Chef Aviad

I hope to sharpen the taste and make the food even more authentic. I want to add new and surprising recipes to the menu and give the guests more items to crave.

Who has been your biggest influence in your career as a chef?

A: Chef Aviad

I appreciate Jamie Oliver and what he’s doing in Britain to help bring healthy and nutritious meals to school children. I strongly believe that kids should eat better and fresher – it starts their lives on the right path. I also really value Gordon Ramsay and his appreciation for being professional and clean in the kitchen. I think a clean kitchen brings a better and finer product. The right cooking procedures do truly affect the final product and taste.

What is your biggest pet peeve in the kitchen?

A: Chef Aviad

Ah! As I just mentioned, I hate a dirty kitchen – I can’t stand it. I also dislike not having the right tools. And I despise it when someone is disrespecting the kitchen crew. Also I think this goes for most chefs, but I really don’t like it when other people touch my knife.

What is your favorite kitchen tool?

A: Chef Aviad

My knife! I do everything with my knife. I almost don’t need anything else in the kitchen. I use a Shun knife set. The one I like right now is the Shun 10”.

What is your favorite guilty food pleasure?

A: Chef Aviad

Like many people, I can’t say no to a high quality bitter chocolate – 70% cacao. I must have something sweet after a meal. I’m also a chocolatier, so I feel chocolate goes well with nearly any meal!
